Crockpot Pesto Chicken Pasta

Coming out of the shadows with this gem of a recipe because I loved it that much!

Crockpot Pesto Chicken Pasta

    1.5 lbs Chicken - About 3 chicken breasts

    Salt & Pepper

    8 oz Jar Pesto

    1/2 Cup Butter

    1 Small Lemon

    Sun-Dried Tomato, diced (optional)

Add chicken to crockpot.  Salt and pepper lightly, spread pesto over chicken, juice lemon over chicken, and lay slices of butter on top.  Can add extra minced garlic and diced sun-dried tomatoes for extra flavor.  Cook on low 6 hours - do not open lid while cooking.

    1 lb Dried Rotini Pasta

    1/2 Cup Parmesan, grated

    2 Cups Mozzarella, shredded

Near the end of the chicken cooking, boil pasta al-dente and drain.  Shred chicken with two forks in crockpot, then stir in cooked pasta and parmesan.  Once pasta is coated with sauce and chicken is mixed in well, top with mozzarella and cover for 10-15 more minutes, until the cheese is melted.  Serve and enjoy!

Pan Seared Chicken Breasts


Sometimes even I, Molly 'Crocker', am not confident in a basic cooking methods and go looking for a tutorial so I don't mess up a meal!  After thinking about this recently, I thought I would share one of my favorite cooking "basics" with you all over here.  If you are ever in need of a yummy, tender, chicken breast for a salad, pasta, sandwich, etc; here's how you can get it!

Pan Seared Chicken Breasts

1.  Dry off chicken breasts with paper towel.
2.  Rub both sides of the chicken breasts with approximately 1 Tbsp of olive oil.  Season both sides with your desired seasonings or pre-mixed seasoning. (seasoning suggestions: salt, pepper, smoked paprika, garlic powder, basil, rosemary)
3.  Heat 1 Tbsp of olive oil in skillet over medium heat.
4.  Place chicken breasts in skillet and cook for 8 minutes (resist the urge to flip or mess with the chicken much) - chicken will start to easily move in pan and edges will be opaque.
5. Flip chicken over, cover pan, and lower heat to medium/low.  Cook for another 10 minutes.
6.  Turn heat off and let chicken rest in pan or covered dish for 5-10 minutes (or until the rest of your food is ready).
7. Serve and enjoy!

Chicken Noodle Soup

This chicken soup is packed with anti-inflammatory ingredients like turmeric, garlic, and ginger!  Not only does it taste amazing, but it's great for you too!

Chicken Noodle Soup

2 Tbsp Olive Oil
8 Cloves Garlic, minced
1 Large Yellow Onion, diced
4 Large Carrots (a little over 1 cup), sliced or diced
4 Celery Stalks (approximately 1 cup), chopped
1 1/2 Tsp Ground Ginger (or 4 tsp freshly grated)
1 1/2 Tsp Ground Tumeric (or 4 tsp freshly grated)
12-16 Cups (3-4 quarts) Chicken Broth or Stock
2 lbs Boneless Skinless Chicken Thighs
1 Tsp Crushed Rosemary (or fresh)
1 Tsp Ground Thyme (or fresh with stems removed)
1 Tsp Salt
Freshly Ground Black Pepper
16 oz Narrow Homestyle Eggs Noodles

Place a large pot over medium-high heat and add oil.  Once oil is hot, add in garlic, onion, carrots, and celery; cook for a few minutes until onion becomes translucent and vegetables are soft.  Add in ginger and turmeric; saute for 30 seconds to let spices cook a bit.  Then, add in chicken broth, chicken thighs, rosemary, thyme, salt, and pepper.  Bring soup to a boil and make sure to stir chicken to the bottom.  Reduce heat to medium-low and simmer, uncovered, for 20-25 minutes or until chicken is fully cooked.  Removed chicken from pot and transfer to cutting board.  Shred chicken with two forks or dice to size preference and add back to pot.  Bring soup back up to a simmer and add in dried noodles; cook for 15-20 minutes until desired tenderness.  If you find that you don't have enough broth, feel free to add in 2-4 more cups (making it a total of 16 cups).  Taste and adjust seasonings, if necessary. Enjoy!

Notes:  Vegetables measurements are just guidelines, feel free to add more or less to your liking; I always dice mine up smaller due to kids preference (harder for them to pick out).  Fresh garlic and herbs are best, but feel free to use from your spice cabinet too!  The garlic is not overwhelming in this soup, don't let the amount scare you.  The turmeric will turn your chicken and noodles yellow (and possibly your wooden spoon); it's okay!  I prefer to use chicken thighs in my soup, but you can use chicken breasts as well.  My family likes a high noodle ratio, so we usually use 3 quarts of chicken stock, but if you like more broth, bump it up to 4 quarts!  I buy my noodles at Walmart - they are usually on the bottom shelf by the other egg noodles (Essenhaus Narrow Homestyle Noodles).

Cheesy Chicken Bacon Noodle Soup

I threw together this soup and I loved it so much that I decided I better write it down and share it!

Cheesy Chicken Bacon Noodle Soup

3 Cups Cooked Chicken, shredded/diced
8 Cups (2 Qts) Chicken Stock
1 Cup Whole Milk
1/2 Cup Chopped Celery
1 Cup Chopped Carrots
1 Packet Ranch Dressing Mix
1/2 Cup Bacon Crumbles
4 oz Cream Cheese
12 oz Fine Egg Noodles
1 1/2 Cups Mild Cheddar Cheese, shredded

In a large pot (at least 6 qt), combine chicken, stock, milk, celery, carrots, ranch mix, bacon, and cream cheese over medium-high heat and bring to a boil.  Reduce heat and simmer covered 20-25 minutes, stirring occasionally to keep from sticking to bottom.  Add noodles and shredded cheese - serve once noodles are soft.

Notes:
  • I used boneless skinless chicken thighs cooked in my instant pot (seasoned well with seasoning salt, pepper, and Italian seasoning, then cooked with half a onion (sliced), one clove minced garlic, and chicken broth). Chicken breasts, rotisserie chicken, etc will all work fine too!
  • I find shredding your own cheese melts better and really doesn't take much extra effort. 
  • I used Costco's Bacon Crumbles when I made this - fry up your own bacon if you prefer!
  • The veggie measurements are approximate - throw in what your family loves!

Dorito Hotdish

This dish is not light and therefore, definitely not diet friendly, but it sure does fill you up in the yummiest way!  Yummy with ground beef or shredded chicken (approximately 2 cups), use whatever cheese your heart desires (I like cheddar), and make it as mild or spicy as your family prefers!

Dorito Hotdish

1 lb Hamburger, browned & drained
2 Cups Shredded Cheese
1 Can Rotel Tomatoes with Chilies (mild)
1 Can Cream of Chicken Soup
1 Can Black Beans, drained
1 Can Corn, drained
1/2 Cup Milk
1/2 Cup Sour Cream
1/2 Packet Taco Seasoning
1 Bag of Nacho Cheese Doritos, crushed

Preheat oven to 350 degrees.  In large bowl, mix together hamburger, 1 cup cheese, Rotel, soup, beans, corn, milk, sour cream, and taco seasoning.  Spray your baking dish (I use a 9x13 glass pan), take half of the crushed Doritos and spread on the bottom, then layer with 1/2 of the meat mixture, repeat Dorito's and meat mixture, top with remaining 1 cup of cheese.  Cover and bake for 35 minutes, then uncover and bake an additional 10 minutes or until nice and bubbly.

Cheesy Chicken & Wild Rice Hotdish

Lets just say it...I LOVE HOTDISH!!  I'm a good Lutheran girl from Minnesota and we know our hotdishes (go ahead and call them casseroles or whatever you want in your parts)!  Being from Minnesota also throws in love for wild rice too!  :)

I have been a fan of Picky Palate long before I even decided to become a blogger myself.  She likes to post lots of crazy yummy desserts, cookies, and things of the like, but every now and then she throws out a DELICIOUS dinner gem like this one.  I have been making this for a long time, but was finally able to snap a quick pick (albeit on my iPhone and a bit blurry/grainy) so I could share it with you all!  This always goes over well and I hardly get to enjoy leftovers!

Tips: I buy a rotisserie chicken at Costco (they're usually cheaper than preparing the chicken myself) to make this and usually have enough chicken left over to throw another hotdish in the freezer for later (because it makes a great freezer meal for those busy nights).  You can also buy ready-made rice and use in the recipe (from Trader Joe's or your local grocery like PP suggests in her post).

Cheesy Chicken & Wild Rice Hotdish

3 Tbsp Olive Oil
1 Medium Onion, finely chopped
3 Stalks of Celery, finely chopped
3 Carrots, peeled & finely chopped
3-4 Cloves Garlic, minced (use up to 2 TSP of minced garlic from the jar)
2 Cups Chicken, cooked & shredded
2 Cups Prepared White Rice
2 Cups Prepared Wild Rice
1 Tsp Salt
1/2 Tsp Black Pepper
1/4 Tsp Garlic Salt
1 1/2 Cups Shredded Cheddar Cheese (for topping)

Cheese Sauce:
4 Tbsp Butter
1/4 Cup Flour
1/4 Tsp Salt
1/4 Tsp Black Pepper
2 Cups Chicken Broth
2 Cups Shredded Cheddar Cheese

Preheat oven to 350 degrees.  In large pot or dutch oven, heat oil over medium-high heat.  Sauté onion, celery, and carrots until soft - approximately 10 minutes.  Stir in garlic and cook for additional minute.  Stir in chicken, rices, and seasoning - reduce heat to low.

In another sauce pan - melt butter over medium-high heat.  Whisk in flour, salt and pepper - then slowly whisk in broth.  Continue stirring until nearly boiling and add in cheese until melted.  Pour cheese sauce into rice mixture and transfer to 9x13 baking dish.  Top with additional cheese and bake for 30 minutes (until cheese is melted through).

Kelly's Buffalo Chicken Chowder

To say I have a family of GREAT cooks is an understatement!  It should be no surprise I learned most of my skill from my mother, grandmother, and all the other wonderful cooks and bakers we enjoy in our family.  My cousin Kelly is no exception!  She lovingly shared this recipe for all of you today!  The recipe below serves 4 - feel free to double, triple, or more as needed!  She also pre-made the soup and then warmed in a crock-pot the next day.

Kelly's Buffalo Chicken Chowder
Adapted from Closet Cooking

2 Tbsp Butter
1 lb Chicken, cut into bite sized pieces
1 Cup Onion, diced
1 Cup Celery, cut into small pieces
1 Cup Carrot, cut into small pieces
2 Cloves Garlic, chopped
2 Tbsp Flour
3 Cups Chicken Stock
*Hot Sauce, to taste (I used 1/4 cup Franks Red Hot sauce)
1 Large Yukon Gold (or other boiling potato), peeled and cut into bite sized pieces
Salt and Pepper, to taste
1 Cup Heavy Cream (I used half and half)
1/4 Cup Blue Cheese, crumbled

Melt the butter in a large sauce pan over medium heat.  Add chicken and saute until golden brown, about 8-10 minutes.  Add onion, celery and carrots and cook until tender, about 10-15 minutes.  Add garlic and flour and cook until fragrant, about a minute.  Add the chicken broth and deglaze the pan. Add hot sauce and potatoes, bring to a boil, reduce heat and simmer for 20-30 minutes.  Season with salt and pepper, mix in the cream and blue cheese and remove from heat when the cheese has melted.

Chicken Taco Soup

Who doesn't love a meal that practically makes itself?!  I first had this wonderful crock-pot meal over a year ago at a women's retreat and have been making it ever since.  I finally remembered to snap a few pictures quick so I could share with all of you over here!

Chicken Taco Soup

1 Onion, chopped
1 - 16 oz Can Chili Beans
1 - 15 oz Can Black Beans
1 - 15 oz Can Corn, drained
1 - 8 oz Can Tomato Sauce
1 - 12 oz Bottle/Can Beer
2 - 10 oz Cans Diced Tomatoes with Green Chilies (Rotel)
1 Packet Taco Seasoning
3 Whole Skinless and Boneless Chicken Breasts
Optional Toppings: Shredded Cheese, Sour Cream, Crushed Tortilla Chips, etc

Put onion, beans, corn, tomato sauce, beer, diced tomatoes, and taco seasoning in crock-pot.  Stir until blended, then lay chicken breasts on top, pushing down until just covered by soup mixture.  Turn crock-pot on low, cover, and cook for at least 5 hours.  Remove chicken breasts and shred with 2 forks and put back in crock-pot, stir and cover.  Continue cooking on low for at least another 30 minutes to 2 hours.  Served topped with shredded cheese, a dollop of sour cream, and crushed tortilla chips if desired.

Chicken & Rice {Hotdish}

I have been making this hotdish for a looong time.  In fact, I first got the recipe from a family I babysat for when I was 14. With a busy family, this is really easy to put together - I bet even your babysitter could do it! :)

Chicken & Rice Hotdish

1 Can Cream of Chicken Soup
1 Can Cream of Mushroom Soup
1 Cup Chicken Broth (1 Cup Hot Water + 3 Bullion Cubes)
1 Cup Milk
3 Cups Instant Rice (such as Minute Rice
3 Chicken Breasts, cut-up
1 Bag Frozen Sliced Carrots

Preheat oven to 350 degrees.  Mix all ingredients in 9x13 glass pan (yay for no extra dirty bowls!) and bake for 60-75 minutes until nice and bubbly.

Chicken Noodle Casserole

This is a super simple casserole that is sure to please everyone in the family.  Use a rotisserie chicken bought from the store, leftover roasted chicken or turkey, or even use a couple cans of chicken.  You can pretty much wing this recipe and change up ingredients to suit what you have in your kitchen.  One of the things I love the most about the ingredients list for this casserole...it doesn't require "cream of something" soup.  :)

Chicken Noodle Casserole

14-16 oz Pasta (I used bow-tie on this occasion)
1/2 Cup Butter
6 Tbsp Flour
4 Cups Chicken Broth
1 1/2 Cups Half & Half (or 3/4 cup milk & 3/4 cup cream)
1/2 Tsp Chicken Seasoning
1/4 Tsp Salt
1/2 Tsp Garlic Pepper
3-4 Cups Chicken, cut up
1/2 Cup Parmesan, grated
2 Cups Frozen or 1 Can Peas 
3/4 Cup Parmesan, shredded

Cook pasta al-dente per package instructions, drain.  In large sauce pan, heat butter until melted.  Stir in flour and seasonings - stir constantly until smooth and bubbly.  Slowly add in broth, then half and half and bring to a boil, stirring constantly - boil and stir for 1 minute.  In 9x13" pan, stir together noodles, cream mixture, grated parmesan, and peas.  Top with shredded parmesan.  To serve immediately: bake at 350 degrees for 30-40 minutes , until good and bubbly.  To freeze for another day: after topping with parmesan, do not bake.  Cover dish well and freeze.  When ready to use; completely thaw dish in refrigerator and bake according to directions.

BBQ Grilled Chicken

I think summer is finally here in Minnesota!  It's been a loooooong winter and boy have I missed using the grill!  This is a great simple barbecue sauce for chicken and would work great for pork as well.  If you don't have a grill or it's the middle of winter and you have a craving, this also works wonderfully in the oven.  This recipe is good for approximately four chicken breasts.  Note:  I grill this on tinfoil that has been sprayed with cooking spray.

BBQ Grilled Chicken

1/4 Cup Brown Sugar, packed
1/4 Cup Ketchup
1 Tbsp Worcestershire Sauce
1 Tbsp Soy Sauce
1 Tsp Dried Thyme
1 Tsp Garlic Salt
1 Tsp Garlic Pepper

Mix all ingredients and coat your chicken.  Use left over to baste as you cook.

Tuscan Garlic Chicken

I decided I need to get over here this morning and give you all some food love.  :)  Sorry things have been so quiet - I am currently expecting our third child and have been slacking in the kitchen.  My poor family is probably tired of seeing the same 'ol, same 'ol every week.

This adapted recipe is another no-fail from MKC's I made a few weeks ago for a lovely group of ladies.  As usual, the dish did not disappoint - we were all left wanting to lick our plates! :)  Also, this is supposedly a knock-off Olive Garden dish.  I have never had it there so I can't confirm, but the ladies who devoured it said this recipe actually outdid Olive Garden's version.  :)

Tuscan Garlic Chicken

Note: I butterflied my chicken breasts for a thinner cut - seems like they all come ridiculously thick these days.  (Sorry you can't see the actual chicken on my picture above, I really liked the sauce when I plated it up apparently).

3/4 cup All-Purpose Flour
1/2 Tbsp Salt
1 Tsp Pepper
1/2 Tsp Dried Basil
1/2 Tsp Dried Oregano
4 Boneless, Skinless Chicken Breasts
7 Tbsp Extra Virgin Olive Oil, divided
2 Tbsp Garlic, finely minced (about 5-8 cloves)
1 Red Bell Pepper, chopped
1 Cup Chicken Broth (low sodium)
6 oz Fresh Spinach
1 Cup Heavy Cream
4 Tsp Cornstarch
2 Cup Milk
2 Cups Parmesan Cheese, freshly grated
1 lb Fettuccine

Preheat the oven to 350 degrees F.

In a shallow dish, combine the flour, salt, pepper, basil and oregano. Dip each chicken piece in the flour mixture until both sides are well coated (cover them with the flour then press).

In a large 12-inch nonstick skillet, heat 3 tablespoons of the olive oil over medium heat until the oil is hot and shimmering. Carefully place the chicken breasts in the pan, cooking them for 2-3 minutes on each side, until they are golden and browned but not cooked all the way through (they’ll finish up in the oven). Don’t scoot the chicken around once you lay it in the hot oil - you want to sear the crust on the chicken. If you try flipping too early and/or moving the chicken around the pan, the breading is likely to fall off. Gently remove the chicken to a foil-lined, lightly greased baking sheet and bake in the preheated oven for about 15 minutes, until the chicken is cooked through. Set aside and tent with foil until ready to use.

While the chicken is cooking, heat a large pot of water to a boil and add the noodles, cooking until al dente.

Wipe out the skillet with a couple paper towels and return it to medium heat, adding the remaining 4 tablespoons olive oil. When the oil is hot, add the garlic and bell pepper, sauteing for 2-3 minutes.
Stir in two tablespoons flour and stir constantly while cooking for another minute. Add the chicken broth to the skillet and bring the mixture to a low simmer, whisking constantly, until slightly thickened, about 3-4 minutes. In a small liquid measure, whisk together the cornstarch and cream. Add the spinach, milk and cream mixture to the skillet. Bring the mixture to a simmer and cook, stirring occasionally, until the spinach is wilted and sauce is slightly thickened, about 2-4 minutes. Stir in the Parmesan cheese.

When the pasta has finished cooking, drain and return it to the pot. Toss the pasta with about half of the cheese sauce (you'll probably have more than enough). Place some of the coated pasta on each plate. Top with a breaded chicken breast and spoon some of the sauce over the top of the chicken and pasta. Serve immediately.

Serves approximately 4-6 depending on how you do your chicken breasts.

Creamy White Chili

A great way to warm up on a cool day!  This chili has just the right amount of kick, without sending the kids running!  We serve ours over some sticky white rice, with cheese sprinkled on top (I dare you to try it).  YUM!

Creamy White Chili

1 lb Boneless, Skinless Chicken Breasts, cut into 1/2" cubes
1 Medium Onion, chopped
1 1/2 Tsp Garlic Powder
1 Tbsp Oil
2 - 15 1/2 oz Cans Great Northern Beans, rinsed and drained
1 - 14 1/2 oz Can Chicken Broth
1 - 4 oz Can Chopped Green Chilies (add another can for more kick)
1 Tsp Salt
1 Tsp Ground Cumin
1 Tsp Dried Oregano
1/2 Tsp Ground Pepper
1/4 Tsp Cayenne Pepper
1 Cup Sour Cream
1/2 Cup Whipping Cream

In large saucepan, saute chicken, onion, and garlic powder in oil until chicken is no longer pink.  Add beans, broth, chilies, and seasonings.  Bring to a boil, then reduce heat and simmer uncovered for 30 minutes.  Remove from heat, stir in sour cream and cream.  Serve immediately.

Grilled Island Chicken

This recipe came via My Kitchen Cafe and it did not disappoint!  Incredibly tender and oh so flavorful!  I marinated three chicken breasts, but I think the marinade would easily do more.

Grilled Island Chicken

1/3 Cup Vegetable Oil
3 Tbsp Lemon Juice (freshly squeezed is best)
1 1/2 Tbsp Soy Sauce
1 Clove Garlic, minced
1/2 Tsp Dried Oregano
1/4 Tsp Salt
1/4 Tsp Ground Pepper
2-4 Chicken Breasts

Combine all ingredients in gallon Ziploc bag.  Shake well until the marinade is well mixed.  Add chicken to bag - press out all air from bag and seal tightly.  Refrigerate and let marinate for up to 10 hours (3 hours at minimum).

Preheat grill.  Cook on grill for approximately 7 minutes each side or until center is no longer pink (approximately 165 degrees internal temp).  Remove from grill and tent with foil for about 5 minutes before serving.

Buttermilk Fried Chicken

Before the recipe, I had never fried chicken in my life.  KFC or my hometown's Dairyland were my go-to places when I felt the urge to have some fried chicken because fried chicken just isn't a last minute, whip up a batch kind of meal!  I love what buttermilk seems to do for any kind of recipe, so when I came across this it got put on the weeks menu pretty promptly.  We were not disappointed at all...the skin got beautifully crispy and yummy!

Buttermilk Fried Chicken

1 Fryer Chicken (2 1/2-3 lbs), cut up
1 Cup Buttermilk
1 Cup Flour
1 1/2 Tsp Salt
1/2 Tsp Pepper
Vegetable Oil for Frying

Place chicken in a large flat dish or you can use a large ziploc (you'll lay it flat while it marinates).  Pour buttermilk over chicken, cover, and refrigerate for 1 hour.  Combine flour, salt, and pepper in a large ziploc.  Drain chicken pieces; toss, one at a time in flour mixture.  Shake off excess and placed on wax paper for 15 minutes to "dry."

Heat 1/8-1/4" oil in a large skillet (I had to use 2, my biggest wasn't big enough); brown chicken on all sides.  Cover and simmer, turning occasionally, for 40-45 minutes, or until juices run clear and chicken is tender.  Uncover and cook 5 minutes longer.  Remove chicken onto paper towels to get rid of excess oil.

Chicken and Biscuit Casserole

This is a yummy dish which is very easy!  I loved that it didn't require me to cook a chicken before I could make it (although you could if you wanted) because a whole rotisserie chicken (shredded) from the grocery store was the perfect amount!

Disclaimer:  You'll  notice what almost looks like bread crumbs on top of the biscuits of my casserole...this is what happens when you're sauteing garlic and your kids decide to break out into a mini wrestling match!  I over-browned it and used it anyways!  It's amazing how fast garlic can go from pretty and nicely sauteed to crispy and over-done!!

Chicken and Biscuit Casserole

4 Cups Chicken, shredded
1/2 Cup Butter (1 Stick)
3 Cloves Garlic, minced
1 Onion, minced
3 Stalks Celery, diced/sliced (however big you like your celery)
2 Tbsp Flour
1 (14 oz) Can Chicken Broth
1 Can Cream of Chicken Soup
Salt and Pepper, to taste
2 Cups Bisquick Mix
1 Cup Shredded Cheddar Cheese
2/3 Cups Milk

Preheat oven to 400 degrees.

Melt half of the butter with minced garlic; saute for 1 minute. Set aside.

Place the shredded chicken into a casserole dish.  In a saute pan, melt the remaining butter. Saute celery and onions for approximately 4 minutes.  Lower the heat, add flour, and then chicken broth. Simmer for 2 or 3 minutes. Take off heat and add cream of chicken soup, add salt and pepper to taste.  Pour over shredded chicken and mix in well.

In a separate bowl, mix Bisquick mix, milk and shredded cheese. Drop this by rounded spoonfuls onto the chicken.

Baste the biscuits with the previously-made garlic butter and cook in the oven for 22-25 minutes.

Slow Cooker Creamy Italian Chicken

I discovered this recipe over at Tasty Kitchen - I needed a crock pot meal for a busy day and this definitely fit the bill and won us over!  We had ours with rice and loved it!

Slow Cooker Creamy Italian Chicken

6 Frozen Chicken Breasts
1 Bottle Italian Dressing
8 Oz Cream Cheese
1 Can Cream of Chicken Soup
1 Can Chicken Broth
1 Tbsp Italian Seasoning

Mix together in bowl; cream cheese, cream of chicken soup, chicken broth and Italian seasoning until combined.  Cover and set in fridge.

Next, take frozen chicken breasts and put in the bottom of a large crock pot - cover with the Italian dressing.  Cook on low for 8 hours.  When chicken is finished, drain remaining liquid and place chicken back in crock pot.  Shred chicken with a fork.  Cover with the cream cheese/soup mixture - cook on high for 30 minutes or until completely heated.  If in a hurry, you can preheat the cream mixture in the microwave before pouring over the chicken to save a step.

Serve over any kind of pasta or rice.

Creamy Chicken Wild Rice Soup

I usually double this recipe or triple it - we LOVE this soup (stew? it's on the thicker side)!  You can easily freeze this to reheat later - I like to do it in my food-saver bags, then all I have to do is boil the bag.  I tend to "eye-ball" my measurements on the onion, carrots, celery because they just add more wonderful flavor anyways.  With the wild rice - you can either use the directions listed below or cook according to the package directions with as much rice as you want! :) Serve with a nice crusty bread - I really like french or ciabatta because they're both good at soaking up the last wonderful drops in the bowl!

Creamy Chicken Wild Rice Soup

2/3 Cup Uncooked Wild Rice
2 Tbsp Butter
1 Tbsp Onion, minced
1/3 Cup Carrots, Diced
1/3 Cup Celery, Diced
1/3 Cup Flour
1/2 Tsp Salt
1 Qt. Chicken Broth, heated
3 Cups Cooked Chicken, Diced
Pepper, to taste
1/2 Tsp Poultry Seasoning
1 Cup Cream

Rinse wild rice.  Soak in cold water for one hour.  Drain rice.  Cover with boiling water and cook over low heat for 40 minutes.



Melt butter in a 4-quart pan, saute' onion, carrots and celery until tender.  {isn't that just so pretty! and it smells YUMMY too!} Blend in flour.  Gradually add the heated chicken broth, stirring constantly, until slightly thickened.  Stir in the rice, chicken, and seasonings.  Simmer over low heat 7-10 minutes.  Add the cream slowly to the soup.  Heat just to serving temperature.

Makes approximately 6 bowls.
